We've lived in Utah, Nebraska, upper Michigan and now we've settled in Colorado...at least for now! Marley is 10, Isi is 6 and Enzo is 4!

Yummy Oven Fried Chicken

Got this recipe from Nathan's mom. She is really great at healthy cooking. 

I would have shared a picture of what it looks like when it's all baked and yummy...but, I didn't get one. 

But here's what the pan looks like when it's all gone. 

Oven Fried Drumsticks

10-12 chicken legs and or thighs
3/4 cup baking mix (Busquick)
2 tsp. paprika
2 tsp. Creole seasoning 
1 tsp. salt
1/2 tsp garlic powder
1/4 tsp. crushed Italian seasoning
1/8 tsp black pepper

Cut up and skin chicken pieces. Rinse and drain. Preheat oven to 400 degrees. Spray a 15x10 inch baking pan with vegetable oil. Combine all ingredients in a gallon size bag and mix together well. Brush individual chicken pieces, a few at a time, with olive oil, put them in the bag and shake to coat. Arrange on the baking pan. Bake chicken, turning once, for about 45 minutes.

We have gotten a 10 lb bag of legs and thighs for as low at $3.99. The last one we bought was $6.99. Just watch for low prices. When I get home, or within a few days of buying, I skin them, cut the fat off and cut them into individual drumsticks and thighs. When all is cut up there is about 18 pieces of chicken. I divide them and put them in gallon freezer bags. Write the date on it and throw it in the freezer. 

Sounds like a lot of work but it's really not that hard. 
Just gotta make sure you clean up really well after you skin and cut. 
It's so worth it because it's cheap and oh so yummy.
